Ingredients
Egg – 3 no
Milk – 2 tbsp
Onion – finely chopped – 1 no
Green chilly – finely chopped – 3 no
Ginger – finely chopped – 1 tsp
Coconut – scraped - 3 tbsp
Spinach leaves – chopped – 6 tbsp
Pepper powder – 1 tsp
Salt to taste
Oil – 2 tbsp
Preparation
Beat eggs with milk thoroughly till bubbles appear. Then add onion, chilly, ginger, coconut, spinach leaves, pepper powder and salt and mix well. Heat oil in a pan and pour the above mixture in a round shape. Cook both the sides and serve hot.
Note: Spinach is an excellent source of vitamin A. Spinach is a poor source of calcium. Spinach contains a fair amount of oxalic acid, which binds calcium. A recent test in human beings compared the calcium absorbed from milk with that absorbed from spinach. Almost 30 percent of the calcium in milk was absorbed. Only 5 percent of the calcium in spinach was absorbed. Kale, mustard greens, and turnip greens contain much less oxalic acid than spinach. They are good sources of calcium and vitamin A.
