Ingredients
Cauliflower, grated – 3 cups
Green onions, chopped – 3 no
Cloves garlic, minced- 4 no
Low-sodium soy sauce – 3 tbsp
Garlic salt – 1 tsp
Eggs, beaten – 3 no
Oil
Rice – 4 cups
Preparation
In a large pan, heat enough oil to cover bottom of pan. Fry minced garlic and white part of onions for 2 min. Add grated cauliflower and fry 5 min, stirring constantly. Add soy sauce, garlic salt, green onion tops and stir until mixed. Push mixture to side of pan. Add more oil if necessary, and scramble eggs in empty side of pan until done but still moist. Stir eggs into “rice” and remove from heat.
Note: This is intended for an occasional change. Rice is good in carbohydrate.
