Ingredients
Mushroom- finely chopped – ½ cup
Onion – finely chopped – ¼ cup
Carrot – finely chopped – ¼ cup
Cabbage- finely chopped – ¼ cup
Mint leaves – 1 tsp
Coriander leaves – 2 tsp
Oil – 2 – 3 tsp
Salt – to taste
Powdered spices
Rice- 2 cups
Preparation
Fry rice in a little oil. Then pressure-cook it and keep it aside. Heat oil in a pan and add mushroom, onion, carrot, cabbage and mint leaves. Fry for about 5 minutes and then sprinkle salt, powdered spices and add cooked rice. Mix well in low flame.(around 8-10 minutes) Garnish with chopped coriander leaves and serve hot. (If you wish you can add scrambled eggs too)
Note: It is very much different from the ordinary fried rice as the quantity of oil used is very less. This is specially meant for people who wish to reduce their weight. A low-fat diet based on complex carbohydrates with the addition of fruits and vegetables will cause effortless, permanent weight loss without hunger, while promoting good health. This recipe is very much in line with this goal.
