Ingredients:
1 pound frozen mixed vegetables (carrots, peas, cut green beans)
2 medium size potatoes chopped into small cubes
2 cups of natural plain yogurt
Handful chopped fresh green coriander (for garnishing)
1 large chopped tomato
1 large chopped onion
10 curry leaves
3 tablespoons vegetable oil
1tablespoon of crushed ginger
3 teaspoon powdered cumin coriander
1 teaspoon powdered red hot pepper
1/2 teaspoon powdered turmeric
1 tablespoon salt
1/2 teaspoon mustard seeds
1/2 teaspoon cumin seeds
A shallow 3 quart pan
Preparation
Heat the vegetable oil in a pan. Add mustard seeds. When they start popping put some cumin seeds followed by the chopped onion. As the onion turn red add the mixed vegetable let it fry for three minutes, add potatoes, tomatoes, turmeric powder, powdered red pepper, salt, curry leaves, crushed ginger. Cover the pan, cook the mixture on low to medium heat for 20 minutes or till the potatoes are soft. Now add the yogurt and stir it thoroughly in the vegetable. Garnish it with chopped fresh green coriander and enjoy it with bread or rice.
Note: This is an excellent side dish which provides you with all the goodies of vegetables and yogurt.
