Ingredients
Splenda – 2 cups
Soy flour – 2 cups
Vegetable oil – 1 cup
Salt – 1tsp
Baking soda – 2tsp
Cinnamon – 1tbsp
Nutmeg – 1tsp
Pumpkin – 1 can
Preparation
Combine and mix all ingredients, and pour into one or two loaf pans or a tube cake pan. Bake for 45 minutes at 350 degrees.
Note: Total carb=136 grams (about 8.5 grams per slice)
Soy is considered to have effects similar to estrogen, including maintaining bone and benefiting the heart. May also be protective against prostate cancer and possibly other cancers.
