Ingredients
Potatoes – 500 gm (chopped)
Onion – 1 no (finely chopped)
Olive oil – 6 tsp
Carrot – 500 gm
Honey mustard – 2 tablespoons
Salt and pepper – to taste
Preparation
Preheat oven to 450 F. In 3tsp of olive oil, pepper and salt, toss potatoes and onions. Bake for about 25 minutes. Now place peeled carrots in a small roasting pan; coat with 1 tsp olive oil. In a cup, mix 1 tsp oil with honey mustard. Set aside. Remove vegetables from oven. Turn. Return to oven, placing on lower rack. Place the carrots on upper rack. After 10 minutes, remove carrots from oven. Brush with honey mustard. Bake 12 to 15 minutes. Serve carrots and the other vegetables together.
Note: Carrot, being a deep yellow type of vegetable provides lot of (pro)vitamin A. Potato is rich in carbohydrate.
There is a misconception that carbohydrates are completely avoided for weight loss. When you take the carbohydrates away, your body runs out of glucose and is forced to burn its secondary fuel – fat.
