Ingredients
Cucumber – 2 no
Ginger (chopped) - 1 tsp
Green chilly – 1 no
Water – 3 cups
Cream whipped smooth – 3 tsp (optional)
Finely chopped mint – 1 small sprig
Sugar – 1 tsp
Salt and pepper to taste
Bread – 1 or 2 slices
Preparation
Chop cucumber into large chunks. Boil the cucumber in the water, till soft. Allow it to cool and then blend it in a mixer. While blending, add the bread, ginger and green chilly. Sieve and add sugar, salt. Chill for 2 hours. While serving, take in individual soup bowls. Sprinkle freshly ground black pepper and a small amount of chopped mint.
Note: There is the saying “as cool as cucumber” — This is really true about this vegetable. It not only keeps your body cool but also prevents the chance of heart and kidney problems. So this Cucumber Salads and soups deserve to be eaten.
